It’s a fiesta! Tacos, chilis, sombreros, and margaritas. These fun treats will be a hit at your Cinco de Mayo party!

Margarita Cupcake

For the cupcake:

For the topping:

  • 8 oz. of cool whip
  • small box of vanilla pudding
  • 1 cup milk
  • 1 tsp. key lime flavor

Bake and cool cupcakes. Dip the rims of small, glass dessert dishes into water and then into white sugar crystals. Make lime wedges out of rolled fondant and set aside. Place a cupcake in the bottom of the dessert dish. Fill piping bag fit with a 1A tip with topping and pipe topping around and top of the cupcake so that the cupcake is completely covered. Insert a straw into the dish and attach lime wedge to rim of glass.


Taco Cookies

For the lettuce:

Dump shredded coconut into a large ziplock bag. Add a couple drops of food color and mix until all coconut is green. Spread coconut out on a cookie sheet to dry.

For the meat:

Melt chocolate candy coating and add crispies until there is no excess chocolate left. Pour mixture out onto a silicone mat or a piece of parchment paper and let dry.

For the cheese and tomatoes:

  • small amounts of red and orange fondant, or
  • red and orange candies that can easily be cut to the right shape, like gummies

Cut orange fondant or candy into long, thin strips. Cut the red into triangle-shaped chunks.

For the taco shell:

  • sugar cookie dough

Cut cookie dough out with a round cutter. Drape the cookies over something round (a cannoli form resting on top a cookie cutter works well for this) so that the sides hang down. Bake the cookies like this. Remove from oven and let cool before taking the cookies off the forms.

To assemble the taco cookies: Layer each cookie shell with “meat”, “lettuce”, “cheese”, and “tomatoes”.tacos
