Edible jewels can easily be made using hard candy molds and pre-colored isomalt pieces. Isomalt is a sugar substitute that produces a more clear product than regular sugar and stays flexible longer making it great for sugar art. Although it is edible, it shouldn’t be consumed in large quantities like many other sugar substitutes. Isomalt crystals can be bought and must be cooked on the stove top. Pre-cooked isomalt nibs or venusance pearls can also be bought. Isomalt nibs and venuance pearls come in an assortment of colors and are ready to be melted and used.
When making jewels, you must use a heat-safe candy mold. Because the sugar is very hot when you are working with it, a regular chocolate mold can melt. Jewel molds come in a variety of shapes and sizes. You can make from the tiniest jewel to the largest gem. With all the colors of isomalt available, you can use edible jewels for all sorts of occasions.

- silicone baking or measuring cups
Step 1: Spray hard candy mold with cooking spray. With a paper towel, wipe out any excess.
Step 2: In a silicone baking cup or measuring cup, place isomalt nibs or whole venuance pearls. Melt in microwave in 5 second intervals until the sugar is liquid and bubbling. Use a toothpick to stir bubbles out of the isomalt.
Step 3: Gently squeeze the baking cup to make more of a spout. Slowly pour into prepared candy molds. Fill to the brim of the cavity, but don’t over fill.
Let set until isomalt is completely cooled. Flip mold over onto parchment or silicone mat that is on top of a soft towel (so the jewels don’t break). If there is any extra leftover, pour it onto a silicone mat and keep for a later project. Store in an airtight container with silica gel packets to keep moisture away from jewels.
Edible jewels can be used for an assortment of things. Add jewels to a wedding cake for a touch of elegance. Use jewels to fill a pirate treasure chest or on a princess tiara. Jewels are a great decoration for bridal shower cakes and cupcakes!
